Almond Clementine Clafoutis

Ingredients
Zest from 2 Paramount Citrus clementines
6-10 Paramount Citrus clementines, *supreme segmented
1 tablespoon butter
½ cup almonds, halved
2 eggs
1 cup sugar
1 teaspoon vanilla extract
1 tablespoon brandy or citrus liqueur
1 ½ cups milk
1 cup flour
Pinch of salt
Powdered sugar

Directions
• Preheat oven to 350°F.
• Zest two clementines using a zester or a fine grater; set aside.
• *Supreme segment the clementines. Cube segments and set aside
• Lightly butter a 9 inch pie dish.
• Arrange orange sections in a decorative pattern on the bottom of the dish.
• Place almonds over the clemetines.
• In a medium bowl whisk together sugar and eggs for 1-2 minutes.
• Add vanilla, clementine zest, brandy and milk and mix well.
• Add flour and salt. Whisk until smooth.
• Pour batter over the fruit.
• Bake for 40-45 minutes until browned or a toothpick inserted in the middle comes out clean.
• Dust with powdered sugar and serve warm.
