Anchovy Lemon Salad On A Bed Of Watercress

Ingredients
2 bunches watercress, enough for 4 small handfuls
Supremes of 1 lemon, each *supreme cut into five smaller pieces
Salt preserved anchovies, coarsely chopped
Aged balsamic, to drizzle
Shaved Parmesan

Directions
Place a small handful of watercress on a small salad plate. Sprinkle two teaspoons of lemon supremes on each and a teaspoon chopped anchovy on each. Drizzle with balsamic vinegar and top with Parmesan cheese shavings.
