Apple and Orange Pie

Ingredients
Juice from ½ Paramount Citrus lemons
Peel of 1 Paramount Citrus orange, sliced fine
2 Paramount Citrus oranges, *supreme segmented (reserve peels)
Pastries for two 9 inch crusts
1 cup water
4 tablespoons honey
½ cup brown sugar
3 tablespoons flour
½ teaspoon cinnamon
6 apples; peeled, cored and sliced
1/8 teaspoon nutmeg
1 cinnamon stick

Directions
• Preheat oven to 400°F.
• Juice half of a lemon with a citrus reamer or juicer; set aside.
• Peel an orange, slice the peel fine; set aside.
• *Supreme segment two oranges; set aside.
• In a saucepan, combine water, honey, cinnamon stick and lemon juice and bring to a boil over medium-high heat.
• Add orange segments and peel slices.
• Cover and cook over low heat until peel is very tender.
• Drain orange slices and rind and set aside.
• Meanwhile, in a medium bowl, combine sugar, flour, cinnamon, nutmeg and apple slices.
• Place one pastry sheet into the bottom of a 9 inch pie pan.
• Top with half of the apple mixture.
• Place reserved orange segments and peel.
• Top oranges with the remaining half of the apple mixture.
• Cover the pie with remaining pastry sheet and seal.
• Cut a few slits in top of pastry to vent steam.
• Bake at 400°F for about 1 hour, until pie is golden and apples are tender.
