Baked Lemon French Toast

Ingredients
Zest from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus lemon
6 slices challah bread
8 ounces cream cheese
1 tablespoon fresh mint, chopped
1/3 cup sugar
2 tablespoons butter
4 eggs
½ cup milk
Pinch of salt
1 teaspoon vanilla extract
Cinnamon to taste
Directions
• Zest a lemon using a zester or a fine grater; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• In a small bowl blend cream cheese, sugar, mint and lemon juice.
• Make a pocket in each bread slice by cutting into the middle about ¾ of the way down the bread.
• Spread the mixture in each pocket evenly and close the pockets.
• In a medium bowl beat eggs, milk, lemon zest, vanilla, salt and cinnamon to taste.
• Lightly grease an oven proof dish with melted butter.
• Place bread slices in one layer.
• Pour the egg mixture over the bread slices.
• Cover and refrigerate overnight.
• Preheat oven to 350°F.
• Bake uncovered, until puffed and golden brown.
• Serve with powdered sugar.
