Brussels Sprouts in Citrus Sauce

Ingredients
Zest of 1 orange
Juice of 1 orange
1 ½ lbs. Brussels sprouts
1 small onion, chopped
3 cloves garlic, minced
2 carrots, diced
4 tablespoons extra virgin olive oil
Salt and fresh ground pepper to taste
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• In a large skillet, sauté onion, garlic and carrots with olive oil.
• Add sprouts and sauté for 5-10 minutes until tender.
• Add orange juice, orange zest and season with salt and ground black pepper to taste.
• Cover and cook for about 3-5 minutes until the heated through.
