Ingredients

3 limes
3 lemons
2 oranges
1 grapefruit
2 c. sugar
2 ½ c. water

Directions

Use a zester, not a grater, to peel thin strips off the peels of all of the citrus fruit. If you don’t have a zester, use a peeler, then julienne the strips. In a small saucepan add the zest from the citrus fruit, cover with water, and bring to a boil. Once the water begins to boil, drain off the water. Repeat this step by covering the zest with water, bringing to a boil, and draining. Cover the third and final time with. sugar and water. Bring to a boil. Reduce and simmer for 10 minutes. Saving the liquid (the citrus simple syrup), drain the zest. Allow the zest to dry by lying it out flat on a paper towel. If desired, you can use just one variety of fruit to further isolate a particular citrus flavor.
