Chocolate Orange Truffles

Ingredients
Zest from 1 Paramount Citrus orange
Juice from 2 Paramount Citrus oranges
1 lb. vanilla wafers, crushed
½ cup sugar
4 ounces butter
2 teaspoons rum
1 ½ lbs. melted dark chocolate
1 cup pistachios, crushed or 1 cup coconut flakes
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a large bowl, combine crushed vanilla wafers, sugar, butter, fresh orange juice and rum.
• Mix well and shape into bite size balls.
• Refrigerate the truffles for 1 hour.
• Melt the chocolate with orange zest.
• Dip truffles first into melted chocolate and then into pistachios or coconut flakes.
• Refrigerate for chocolate to harden and serve.
