Duck Eggs filled with Roe Mousse Garnished With Orange Zest QuickChef

Ingredients

4 hard-boiled duck eggs
2/3 c. plain yogurt
Juice and zest of one orange
½ c. roe of choice
Salt and black pepper to taste
4 c. baby spinach greens

Directions

Peel eggs and slice them horizontally in half. Remove the yolk and place it into a mixing bowl. Add the yogurt and orange juice and mix thoroughly. Fold in the roe and salt and pepper. Spread spinach on four plates. On top of the spinach, place two of the egg white halves. Fill them with the roe mixture. Garnish with orange zest.
