Fish Tacos with Citrus Salsa

Ingredients
1 Paramount Citrus lemon, sliced
8 flour tortillas
4 fish fillets
2 tablespoons olive oil
Salt and pepper to taste
CITRUS SALSA
Juice from 1 Paramount Citrus lemon
Juice from 1 Paramount Citrus orange
1 Paramount Citrus grapefruit, *supreme segmented and diced
1 Paramount Citrus orange, *supreme segmented and diced
2 tablespoons extra virgin olive oil
4 scallions, chopped
1 jalapeno, deseeded and minced
4 tablespoons fresh cilantro, chopped
Salt to taste

Directions
• Slice a lemon; set aside.
• Juice a lemon with a citrus reamer or juicer; set aside.
• Juice an orange with a citrus reamer or juicer; set aside.
• *Supreme segment a grapefruit. Dice segments and set aside
• *Supreme segment an orange. Dice segments and set aside.
• Rub fish fillets with lemon slices and season with salt and pepper.
• In a grilling pan or on a grill, over medium heat, heat olive oil and grill fish fillets on each side until lightly browned and the fish is cooked through.
• When the fish is done, cut into bite size pieces.
• Meanwhile in a medium bowl, mix together all citrus salsa ingredients.
• Before serving, cut fish into bite size pieces.
• Serve in warm tortillas and top with citrus salsa.
