Lemon (or orange or grapefruit) Oil

Ingredients
8 tbsp. Lemon (or orange or grapefruit) zest
1 quart flavorless oil
Directions
Combine in a jar. Shake well and let sit overnight. Strain out zest through a coffee filter. This makes an excellent base for salad dressings, a garnish for appetizers, and a dressing for vegetables. Serve with Lemon Oysters On The Half Shell on the half shell.
