Orange and Sweet Potato Dauphinois VegetarianChef

Ingredients

10 lbs. peeled sweet potatoes
Zest of 10 oranges
2 oz. salt
3 oz. garlic, finely chopped
1 qt milk
3 qt cream
White pepper to taste

Directions

Peel and cut the sweet potatoes into thin slices, as though for potato chips. Toss in zest, salt, and garlic. Arrange in even layers in the bottoms of buttered hotel pans. Mix together milk, cream, and pepper. Pour over the sweet potatoes. Place in a 400 degree Fahrenheit oven until potatoes are tender and the sauce has thickened.
