Orange Chocolate Sauce

Ingredients
zest from 1 Paramount Citrus orange
juice from 6 Paramount Citrus oranges
1-1/2 cups whipping cream
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
8 oz. semi-sweet chocolate, chopped
Directions
• Zest an orange using a zester or a fine grater; set aside.
• Juice six oranges with a citrus reamer or juicer; set aside.
• In a saucepan, combine whipping cream with orange zest and bring to a boil over medium-high heat.
• Remove from heat and let stand, covered, for 30 minutes.
• Meanwhile, in another saucepan combine fresh orange juice, sugar and vanilla extract. Stir and bring to a boil over medium-high heat.
• Continue cooking, stirring constantly until reduced by half. Remove from heat.
• Reheat the cream mixture, bring to a simmer and add the orange juice reduction.
• Bring to a boil and remove from heat.
• Place the chopped chocolate into another saucepan and strain the orange-cream mixture into the chocolate.
• Using a blender, blend the chocolate-orange sauce until smooth.
