Orange Ice Cream

Ingredients
Zest from 2 Paramount Citrus oranges
Juice from 2 Paramount Citrus oranges
3 eggs separated
8 tablespoons sugar
2 cups heavy cream
Directions
• Zest two oranges using a zester or a fine grater; set aside.
• Juice two oranges with a citrus reamer or juicer; set aside.
• In a medium bowl, beat egg yolks adding sugar slowly, until very thick.
• In another bowl beat egg whites until stiff.
• Add whipped cream, fresh orange juice and orange zest to egg yolks.
• Finally, add this mixture to egg whites.
• Pour the mixture into a cup and freeze covered until firm.
• Transfer the ice cream to the refrigerator 15 minutes before serving.
